Dear chef John, out of concern for your precious health (as your videos are a potent anti-depressant and I want you to keep going, I recommend you reconsider heating your honey above 40-60 degrees. When heated, It produces hydroxymethylfurfural which can be carcinogenic and genotoxic to humans. And even though one major study showed no traceable genotoxicity in vivo (so far, the carcinogenic effects were neither confirmed nor evidently objected.

As a long time follower, you continue to ROCK, Chef John! I love these cookies, always bought them at the bakery because I thought they'd be to hard to make. Two questions. If you don't have a food processor, would a blender work, or better to chop by hand? Second, could you use a regular cookie sheet, buttered, or parchment paper. Yes, I know I'll eventually have to buy a silicone baking sheet. Thanks.

i LOVE these things! i used to buy them at a local grocery store, but they quit making them: ( they used to drizzle dark chocolate on the top, and they also made them with slivered almonds instead of chopped. either way looks good to me. i haven't made any type of cookies in probably 30 years at least, but i'm for sure going to try to make these.

Another Holiday classic! Growing up, there was a lunch counter that sold freshly made cookies like these, called pogens. It was said to be an exotic European cookie but all over the world butter and sugar tastes good in a cookie! As for other holiday recipes, we are getting ready to bake anchovy and onion pizza!

We used to garnish desserts with these in the restaurant where I worked. Back when I had like, pride in my job, and could earn a living cooking. Never thought I d miss brunch service. Anyway. A truly delicious device and I definitely snacked on way too many.

You are the Dracula of your spatula! I always use a spatula for anything, I have several regular size heat proof spatulas, several smaller ones for mixing, and a freakisly small one. Covers any need.

Here in Germany we make them with slithered almonds and add a bit of cream to the sugar and honey mix. Some people (me included) also like to add some succade or other candied fruit like FI cherries.
