I've tried it twice, I've been pretty happy with the results both times, and I didn't even use fillet. I used ribeyes. The first time I realized I did not like the prosciutto, my first time having it, and decided I didn't like how salty it was (the dish itself wasn't overly salty) it was just this layer of pure salt in it that wasn't well distributed, it was a good quality prosciutto, just don't care for it. 2nd time I made it, I used bacon instead and it was perfectly suited to my tastes. .

You are the best, man. I guess that is one of the dishes Gordon makes potential chefs make. You would have passed with flying colors! I love how this recipe is an individual portion. it is nearly impossible today for someone to afford an entire tenderloin. Stay safe and much love from Colorado!

Another tip, sprinkle a tiny amount of breadcrumbs on the pastry just the size of the beef before you put the beef down on it. It will soak up any juices released by the beef, protecting the pastry, keeping it crispy. You are welcome.

I made Gordons last year and loved it. But I can't wait to try this! The smaller loin cut and the pate look like good additions!
And personally I thought the parma ham did add flavor but I could see how it's a little too much!

I've watched Gordon Ramsay's video about beef Wellington a few times, and would salivate every time! Now, I can see a way to do it for myself without risking an entire cow! Thanks, Chef John! I will give it a try, soon!

Woah, you read my mind. My mom's been super into Hell's Kitchen lately, and they make Beef Wellington every single dinner service. I was seeing 30 plates of it each episode, and it had my mouth watering.
