Looks great! Just a few questions:
Could I substitute kale for the chicken? And can I use quinoa instead of rice? What about kombucha instead of stock? No real dietary concerns, I just like to feel special and my holistic life coach tells me it ll help my anxiety if I mention that I have anxiety every 14 seconds and if I cut down on punctuation and only eat foods I ve seen trending on Twaddler.
Oh, and I ve recently decided I m fungus intolerant (ummm, it s a real thing, look it up boomer #eyeroll) so could I substitute truffles for mushrooms? I saw them in literally every cooking tiktak and they look sooooooo yummy!

I love chicken and rice soup! two suggestions for those who want to play with John's fantastic recipe. First, use wild rice (amazing addition to the flavor profile. Second, buy a rotisserie chx from costco etc. pick the meat and reserve it til the soup is ready and add it in at the end to heat through. Provided you have a good broth already the chx won't have that dried out character / blander taste that can happen from a long simmer.

That would also look so good with colorful chunks of carrot. red bell pepper, and celery. Funny, I was eating the reheated chicken soup I made and froze for later as I watched this video. I do low fat, so I rinse the cooked chicken with hot water in a colander, and use very little butter in the mushrooms. And I remove the fat from the broth. You are the Orlando Bloom of the calories you consume!

Not exactly a glamor dish, is it. No matter how well it's presented; like here. It's still what you eat when you're sick and have a fever and not hungry and your parent or spouse is forcing you to just take a bite or two because you need something else in your stomach other than medicine. And you give in because you're too sick to fight and argue. This is what you eat.

I warm/ heat up my soup bowls in the microwave, same with plates if it is a hot supper, appx. a minute & thirty seconds each works for me, but is just me & the wife so i only have to heat 2, if a big family, put them in oven on 250 degree F on a cookie sheet for appx. 20 minutes.

My personal favorite was being forced to serve cold salads on hot plates straight from the dishwasher because we were out of clean ones. We would put them in the freezer to try to get them down to room temperature before we had to use them.

Folks, if you can find it at your grocer, buy a cage free or organic or Amish whole chicken as the flavor is much better than those mass produced sweat shop chickens, worth the extra dollar or so for a whole chicken. Nice recipe chef john.

Definitely something I'm gonna make for my next chicken dish. Though I might try and put some flour in after sauteing the mushrooms, onions and garlic to thicken the broth more and make it more gravy style.

Looks delicious. Do you have a preference on what type of mushrooms used, or will any do? These look like baby portobello. Also, can one use a rotisserie chicken and just use some broth?
