Wow, a terrific tutorial. A variation that I will try will be to substitute, fried tofu chunks (cut to the same size as the chicken pieces) for the chicken. It won't be the same but it should, nevertheless be really good. You can buy Fried tofu in most Chines or Asian markets and they're delicious with a soft inside and a wonderful skin. We generally steam or microwave them (since they always come out of the refrigerator) which puffs them up a bit, otherwise they won't pick up as much of the various sauces and flavorings. Made this last night. The food processor base had cracked, so when we switched it on and hit the pulse button, it went a-cashoo every where. Got out the stick blender for the second try, and forgot to used kosher salt. a little salty, but very nice dish. Not wanting to be the butt of any jokes, but my wife is talking of sacrificing the pork shoulder meant for the paper pork tonight, to use in this recipe instead of chicken, with adjustments to the spicing. Was going to do the paper pork in the slow cooker, resting on some jam marbles to give air circulation.

Will definitely try cashew milk with my regular Butter Chicken recipe, but the combination of spices in this Creamy Cashew Chicken recipe doesn't quite hit the spot. Perhaps too heavy on the paprika and maybe also the cumin. Also, an overnight marinade of the chicken didn't seem to add any noticeable flavor to the meat. Maybe it's the cooking method: I make Butter Chicken in a pressure cooker which seems to help the spices permeate the chicken.

Ive always loved cooking as a hobby, and I cook 6 nights a week. This is THE BEST thing I have ever made. I followed your recipe, but added a handful of whole cashews when simmering (after all, I am the Henry Winkler of cashew sprinklers) and served over cilantro lime rice. Thank you for many amazing recipes, but especially for this one

I'm just so hungry I'm sick AGAIN with another cold so I can't smell or taste. So I'm not eating. I've been craving curry for soooo long I love my cheap coconut rice, and S&K curry with some raisins if I have them. I have none of it though. Maybe when I get better, I'll get groceries. This looks amazing

I just made this for my Indian (and Bangladeshi and Sri Lankan) colleagues. They all loved it, one of them even started my sauce on the chicken and rice that he made. I think they are all going to start expecting me to cook more Indian food now, at least I have a good foundation for my skill set.

Hubby and I tried this tonight and it was off the hook tasty. Definitely restaurant worthy. Even my 2 very picky kids ate and enjoyed it. One thing I would say is, use the kosher salt if you can because regular table salt is saltier. But if you use table salt use less than the receipt amount.

I should preface this by saying that I like most of Chef Johns recipes. This, however, I did not like very much. It was on the bland side and lacked brightness. Adding A LOT of lime helped, as well chopped seranos, but the dish itself lacked complexity.
