Looks good. Imagine a layer of that Korean (I think it was) egg salad on there, Chef did a few days ago. But instead of a egg salad sandwich you Use it like the spread/mayo. And put it on that soft milk bread he made, instead of toasting the bread. That'd be good too. I'll have one of each, a toasted and a soft, pls. I love the bread both ways, don't get me wrong, I just like to change it up sometimes. In the end it's all so good.

0: 46 Alright hold up Chef John. I respect you and everything, but how are we supposed to follow along when you SAY poke the skin 27-54 times yet CLEARLY you demonstrate 72 pokes during the poking session. Do you seriously expect us to make something as tasty as the end product while giving clearly falsified instructions?

Wait a minute! I used to eat this on holiday with my folks. We'd go into the restaurant, and the Chef John Sandwich was on the menu. It was delicious, and I kept asking for the recipe. They never gave it to me, but also told me I could never leave.
Yes, we used to vacation at the Hotel California.

A couple a yrs ago I asked my wife for a meat slicer & figured he'd get me one for the home that I could put on the kitchen counter, she bought me a 350. 00 commercial slicer like at the grocer, lol, I had to buy a butcher block table & put it in the backroom of the basement, lol

When I cook a turkey for the wife and kids, I will only serve up the dark meat with supper. The breast meat is reserved for sandwiches for the next few days. For me, this is turkey, thinly sliced red onions, romaine lettuce, mayo, and white sourdough bread.

Once a year after Thanksgiving! Really? There s only the two of us in this household and I cook at least a 20 lb bird about every 6 weeks average. And nothing gets wasted. I make bone broth running the bones through twice. So yummy.

I wonder if you could do this with bone in chicken breasts with the skin on. I dunno if they sell turkey breasts around here and whole turkeys are way too expensive when it's not the holidays.

Chef John, very nice recipe, I prefer the large breast from a chix, vs turkey, more flavor, but I hunt wild turkey which is free & has more flavor than store bought turkey breast
