Chicken and Chorizo Rice (Paella style)

Chicken and chorizo paella - a great twist to the classic paella, really flavorful and makes a great dish for lunch or dinner. Ingredients Makes about 2-3 servings 9 0z (250g) boneless, skinless chicken thighs 3. 5 oz (100g) chorizo sausage, thinly sliced 2 cups (500ml) chicken stock 1/4 cup (50ml) white wine 1 pinch saffron threads 1 small yellow onion, diced 1 clove garlic 1/2 tomato, diced 1/4 red bell pepper 1/2 tsp (1g) smoked paprika 7 0z (200g) paella rice or arborio rice 1/2 cup (60g) frozen peas olive oil salt and pepper to taste Lemon slices (optional) 1. Cut the chorizo in thin slices and cut the chicken into 1 inch (3cm) pieces. 2. In a small saucepan add the chicken stock, wine and saffron and bring to a boil over medium heat. Remove from heat and set aside. 3. Heat a 9 inch (23cm) paella pan over medium-high heat. Add the chorizo and cook for about 2 minutes until it releases its oils. Transfer to a plate. Add the chicken pieces to the pan, season with salt and pepper and cook for 2-3 minutes until slightly golden. Transfer to a plate. 4. Add the onion and garlic to the pan and cook for 5 minutes or until onion softens. Add the tomato, red pepper and paprika and cook for 2 -3 minutes more, until the water from the tomato has evaporated. 5. Return the chorizo and chicken to the pan and stir to combine. 6. Sprinkle the rice, stir and pour the chicken stock mixture. From this moment stir no more. Bring to a boil. 7. Reduce heat to low and cook, uncovered, for 15-20 minutes or until rice is tender and liquid is almost absorbed. If necessary add more stock. 8. Add the peas, cover, and cook for 5 minutes more. 9. Remove from heat and let paella covered to rest for 5 more minutes before serving.

This is a recipe for a DELICIOUS dish. Yummy Is this called PAELLA? Is this called PAELLA VALENCIANA? Theoretically, paella comes from the Valencian dialect palla and Italian padella and Spanish padilla meaning a round, flat-bottomed pan. Later on, s Paella meant any food cooked in a palla. The Valencia people began cooking a dish made with chicken and/or rabbit, with rice and herbs and and people started calling it Paella Valenciana to differentiate it from other Paella dishes. Nowadays, there are plenty of variations of this dish, including Jambalaya from the American South. Understandably, the people from Valencia object to others using the name Paella Valenciana for the modernized recipes. Similarly, people from U. K. do not like foreign alcohols being called whiskey no matter how smooth it tastes. And the French do not like foreign products using the name champagne no matter how delicate it tastes. And so on.

Thank you. Although I live in Spain, it is the Memsahib who always cooks the paella. or we just go out to eat. It is not surprising, but in our village, which has about 900 souls, every house has its own version. Having watched your video, and being enthralled by the accompanying music, plus the fact the 'her upstairs' has a broken leg, I took the plunge. Turned out very nice. Used tomato frito in lieu of fresh tomato, and the paella rice took much longer than the recommended 20 minutes. more like 40 minutes actually. but that might have been me rather than your recipe. The bottom line for any 'would be' paelladoras is that you really cannot go wrong making the dish as long as you keep to the approximate order of ingredient additions, as the rice will eventually become soft. Ugh calm ya bloody farm's ya snotty tall poppy wankers, do you know how long it takes to become an actual sushi chef & yet every Tom Dick n Harry's buying it from a shopping centre food-court? I don't give a toss that there's a million Mexican places here in Australia that don't interpret my abolita's EXACT family recipes - couldn't give a flying fk to be honest.

I use Chorizo in my paella all the time. Just because it wasn't included in the original paella recipe that people claim to know doesn't mean one can't kick it up. Don't listen to the Paella police. I have to friends from Spain and they also use Chorizo. It's a wonderful addition to the dish. Great video

So many triggered people, it's fine It's just a nice dish a family wanted to share, they work hard for others to see and try, imagine working hard for something and not getting nice results, who do you think you guys are, critics? I'm very sorry, this just makes me feel miserable, Thank you: )

To all those saying in Spain if you called this paella youd be laughed at, guess what, the chef doesnt call it paella, its called chicken and chorizo(paella style) that is, its cooked in the style but nowhere does the chef say it is paella, only that its cooked in that style and in a paella pan.

Get over yourselves, this might not be a traditional paella but it is paella. Get with the times, traditional recipes have been tweaked a million times over. And someone said, chorizo in paella would be like if Americans put hamburgers on pizza, guess what, we do have hamburger on pizza.

It is a bad idea to watch this video at mid-night. But your videos are wonderful I made the flourless chocolate cake with coffee mousse and the baked doughnuts with Nutella Glaze. They were delicious I love your videos

I'd recommend using a serrated knife when cutting tomatoes, it makes the job easier and less of a mess and spilled juices around. Either way this is a really nice take on Paella and the flavors really go well together.
