First, I was on the Amalfi Coast last May and stayed at Praiano for a few days. I admired the beauty of nature and especially the driving skills of those bus drivers. Simply amazing, the way they maneuvered the winding narrow roads. Wow! And who said the Italians were short-tempered? No, they were quite courteous to other drivers. No cursing, no yelling, no middle finger. No road rage. Second, can I use white wine plus fish stock or clam juice instead of water?

Yummmm. When I hear the Italian accent of Genarro I remember living in Santa Monica California, in the apartment building of our good friends and landlords John, and his wonderful wife Theresa Bondesani. They often had Sunday dinner ready for us. the best ever Pizza and Spaghetti conne meatbollah.

Only recently I discovered Gennaro, and I've been binge watching his recipes ever since. You gotta love his passion for the ingredients and food itself. It's very touching to see him cooking and talking about memories. What a guy!

This looks gross, he left all the shells and heads on the praawns and included the bones and what seems like the scales and guts of the fish! even if the sauce is good, it would be a nightmare to eat! Ughh gross

This is why Italian food is the best in the world. That's right, all of my friends who are Persian or Japanese seem to agree. They all have their qualities, but true Italian cuisine is on another level.
