Hey! I am making this today and have a question for you. In your book it says basting every 10 minutes with the BBQ sauce. Does that mean that you only apply BBQ sauce to the side of the ribs that are facing upwards from the grill? Also in the video you dont use a drip tray on the indirect side and place the ribs (when they are packed in foil) on it like it says in the book. You put the ribs right on the indirect side when wrapped in foil (no drip tray. What is the right way to do it? You make awesome dude-food man!

I thought I was coming to this video for quality cooking information but it looks like that's not going to happen. As entertaining as this video may seem, there are no bbq fundamental explanations here. Why are you doing any of the things you're doing? When cooking with a kettle grill, which side should the vent be on and why? how to control temperature? no smoke? . ugh. I thought Jamie Oliver's thing was to get people into cooking well. I guess, being a character on video seems to be enough.

Made these last weekend for a friend's bbq. They had ordered a load of meat from a butcher, some marinated. These ribs were a hit and was the only dish that got polished. Now I'm making them again at a bbq, however I've got from 2 racks to 10! This time adding the Treacle to go with it!

That's like 2 hours and 40 mins of cooking time + add on half an hour prep. So around 3 and a half hours for some ribs that have hardly any meat on them anyway. Would much rather whack them on with foil off and cook some in 15 mins

I been watching Jamie since he was really thin, road a vespa & wore cool hats a lot on the food network, but I love foodtube so much more than food network. DJ BBQ is a pretty rad dude himself.

They forgot the most important part of ribs. You have to boil them for about 20-30 minutes before you marinate and then they go on the fire. Then the meat will just fall off the bone.

Anyone know if cooking the first 2 hours in a kitchen oven would affect the bbq flavour much? As it is wrapped in foil for this bpart, does the charcoal penetrate it? Thanks
