Family Ragu with Gennaro Contaldo Ty: I m cooking this sauce now. this guy is the man. I will say that as I m cooking I feel like he suggests that the sc should be covered. if you do the recipe exactly not sure it s the right move, my sc is too thin. I did not follow the recipe exactly per se I used beef shank 500g ox tail probably 700g and my local grocery stores Italian blend 500g ish. I know that these amounts of the cuts I used is more and would take longer time to make tender. that being said, I used roughly the same about of tomatoes and liquid. still the sc is too thin maybe less water and/or keep uncovered

My wife made this dish and it was absolutely great! One huge problem was that we loved it so much that it was gone with a quickness! If you haven't tried this recipe I definitely recommend it! He did it very quickly and made it look so simple I think because he has done it countless times, but when my wife cooked this, it took quite a bit of time and took multiple steps to get it all done. Gennaro is a culinary genius, though. I cannot deny that.

Bravo Gennaro! I have made a genuine Italian ragu at least once a fortnight for over 40 years. I adore it. Of all the thousands of recipes I've read and seen over the decades, yours is the only one that has ever brought tears to my eyes. So I'm curious, as u use this ragou for a lasagna too: what about the chunks of meat? Are they that well cooked, that they just fall apart by themselves, is there some good way to separate them or are they just left out when adding to the lasagna. I assume it's the first option, but I would like to hear some thoughts on it.

Watching him cook. is just so organic. So pleasant. It brings people back to simpler times, to just cooking for the simple enjoyment of the food. Anyways, I gave this recipe a try, and it was a hit. Thank you for providing this beautiful content to us! I absolutely could watch him cook for hours.

I've just finished eating this after a four hour cook. This is easily my favorite pasta. A jolly old Italian man's family recipe brightening up a rainy day for a working class 20 something on the other side of the world, it's incredible.

This is truly magical! 3: 25 we have a solid Le Creuset cast iron skillet with a solid lid and after two hours, 3: 33 it magically changed into something else, featuring a glass lid. Please explain the secret behind this transformation

I could imagine if a motion picture movie was made of Gennaro Contaldo. this would be a hit at the box office your style of showing how to cook Italian food is like an antidepressant this is worthy of my attention
