Today's recipe is for kongnamulguk (soybean sprout soup, which is one of the most common, typical, and popular Korean soups! Lady: I've been eating and cooking almost exclusively Korean dishes, and have been binge-watching Maangchi. I just ate some more homemade mandu and homemade kimchi for dinner. Maangchi is helping me become the best soon to be housewife ever. Seriously, though, if you haven't tried her recipes, TRY THEM. She's introduced me to ingredients I was initially afraid of cooking with, and my cooking came is actual fire now.

One of my favourite soups is a baked mixed vegetable soup. Simply roughly chop some of your preferred vegetables (For the soup I typically use tomato, onion, bell pepper and some mild chilis) put them into a deep baking dish and mix them with some olive oil, salt, pepper and other spices if you like (I like a bit of dried oregano, basil and cumin) Bake until the vegetables are soft and have some colour on the edge, flip them and keep baking to get more colour if you like. Then blend them or use an immersion blender and mix with stock or water to get the consistency you like. The baking gives the soup a really nice deep flavour. You can also use this technique to make great bases for pasta sauce or chili.
If you want to add meat, you can bake whatever you like with the vegetables and take it out and chop it up before blending, I like using sausages of all varieties or chicken thighs because the flavourful fat they release will mix with the vegetables and help make the soup amazing!

maangchi unni! i m not korean but i love saying kongnamul and katdugi and gamjatang etc. i think your videos made me a huge fan of korean food for over a decade now. saranghae!

Where do you get the anchovies? I ve been wanting to use fresh anchovies for making Caesar salad dressing. But I can t find them. Never mind dried anchovies.

Maangchi, if you put the dried anchovies into the little soup pouch assuming every part of anchovy stays in pouch, why remove head and guts? Pleas respond! Ty!

My favorite is chicken noodle. Do you have any suggestions to spice it up or make it fancy? I was thinking of using bean sprouts instead of noodles.

When you were slicing the onion I thought it would've been fun if you magically ended up with a fish in your hand like you do in the intro. LOL

My mom use dried anchovy before boiling every other stuffs. And them filter water from anchovy. Maybe it could much easier to make!
