This is fantastic! Wouldn't a small section of this draped in the bottom of a cocktail glass look great? (maybe put in the freezer prior to adding the drink to keep the shape and minimize liquid absorption, assuming daikon behaves like that. Or maybe you could cut pieces out of the mesh, flash freeze them with liquid nitrogen, add to a tall glass, and make an attractive iceless mixed drink.

I've got some pretty serious knife skills, and I've been in food for a long time - and this is the first time I've seen this. Thank you. Maybe I don't have much imagination but I would like a garnish like that for the 'catch of the day' special. Literally drape a whole fish (cleaned, gills and fin tips removed, seasoned and grilled) with a net to present the 'catch of the day'.

I'd use this in a presentation of grilled salmon or tuna. Use a serving dish that's a darker color (ideally blue, spread the net out on it, then top with the fish. Maybe get into a little bento-style garnishing - say, a scoop of hummus with starfish cut out of nori to represent beach sand, etc. Get visually creative.

Cut 6 of these, hang them from the masts of a small scale sushi boat pirate ship and stick fried shrimp heads with the fried shrimp tails attached from them here and there so they mimic little pirates. Have more fried shrimps manning celery oars, and have fun with it.

Hi, I loved your video. Unfortunately, they never taught us this technique in culinary school. I am curious how deep you are cutting and are you turning the daikon radish a quarter turn? It's hard to tell online especially with a white vegetable.

I pictured it being used to decorate a beautiful seafood platter with crab legs, lobster, clams etc. It looks like a fishing net and how beautiful to have those vibrant crustaceans mixed amongst the bright white of the Daikon.

i would not wast my time making this just to eat but it would be some thing i'd do just to try it so i'm off to the shop to buy some thing i can cut into a net just to say i'v done it. cool video tho

Would it be possible to put this in a bowl so it takes its form, then slowly dry it out in the oven so it becomes harder and you can use it as a cage to place over your meat or fish or whatever?

Can you preform this cut on other vegetables rather than the daikon radish? It is hard to get them where I am located and would certainly love to try this technique with my new damascus set.

Omg, I made sushi shaped as koi some time ago, this would've been a great garnish to it. It'd look amazing on top of a black plate to make a grid-like design where you can put the sushi.
