When I was a kid, my dad used to go fishing and bring us lake fish. Sometimes, when he brought the fish from a smaller lake, it would taste muddy. That also happened with a very big - old fish. The taste was like eating the mud from the lake. When I went to Japan my Japanese friend brought me to one nice sushi restaurant where two chefs were making us sushi right behind the counter we were sitting at. That's where I saw uni for the first time. I asked my friend and he said it's a great delicacy and he loves it, so I ordered an uni sushi too. I was very disappointed though. The taste was like the mud from an old, small lake I described earlier. I couldn't enjoy it. It was in early May in Ousaka. What do you think, is uni supposed to taste that way or was my uni maybe just an old guy?

Actually, Uni out of season can be toxic. I'm from Galicia, it is common knowledge between us, though no science to back it up. I'm from a small fishing village and we collect them from the rocks by the beach. Season is towards the end of winter, more like Jan to March. We just split them open and eat as is. Certainly a delicatessen from the sea. No expert or anything, just commenting our tradition. Thanks for the video, has given me some ideas, never thought of Uni in a dish, funny

In New Zealand we call these kinas. Theyre quite popular here and basically eaten raw straight from the ocean lol. Never tried them in the form of sushi as the idea of adding rice and seaweed isnt as popular i guess. Its fresh rich and creamy flavour on its own needs no pairing with rice lol. unless ur just a selfish prick.

In Sicily we would bring scissors & a loaf of bread when we'd go to the beach. Instead of cutting vertically we would cut around the middle, horizontally then rinse in the ocean. All the yucky stuff washes away & your left with a tiny plate of orange deliciousness. Scoop with bread if you like.

The fact than mankind has figured out how to prepare and eat what we eat is mind blowing. Imagine being the first person to catch one of these and figure out if it's edible or kills you.

I seen a master sushi chef use a bamboo roll over that same dried sheet he used but without cutting strips and it came out nicer. It made one big long roll and he cut the pieces out of that

How To Make Sushi, I've always wondered, do you record the cooking and talk in the background with an audio voice recorder edit or do you record while talking and cooking?
