We make something very similar but we boil chicken breast in chicken bouillon, msg and taco seasonings with a bay leaf of course and shred it and shimmer it till all the chicken soaks up most of the liquid then build like you do but we do fry the tortillas a little bit just to make them softer. We just started using the roasted garlic and mushroom soup recently I highly recommend trying the roasted garlic mushroom soup it's a game changer. Enjoying the videos keep up the hard work

I will be making this soon! I've been with you for years! I even have your cookbook tht gets used regularly. I'm a 51 yr white female. and I tell all my friends. I know how to make fresh corn tortillas bc if simply moma! I even know your cilantro lime rice by heart now. love ya girl bless you and you're family!

Do you think this would freeze well, I'd make a double batch and freeze 1 for another day.

I'm gonna make this one, but split the amount of ingredients to half to fit in an 8X8 square pan to bake inside my Toaster oven! These are the Casseroles I like to made for me, (a Single person) to eat throughout the week! More casseroles made with shredded chicken Plzzzzz!

That Monterey Jack cheese and the green chili sauce is just so yummy together and creamy, I fix mine the same way. There are some days that I add rice to mine I just like the texture of the rice with it for some reason I know I'm wired. Thank you for sharing.

I buy a 4-5 lb chicken and put it in my crockpot for 5 hours on low and shred that up. It's a little bit cheaper than the rotisserie chicken and I also get to make my own bone broth afterwards
But this recipe looks incredible!

I have been making a very similar recipe to this for years too! I love to eat it so much with tortilla chips sometimes just make the filling, omit the tortillas, bake it and eat it as a Mexican style chicken dip and it’s amazing

NOTHING you do is subpar. My wife puts the yuck in super picky. I made your cheese enchiladas con chile de carne and she LOVED it! Instead of sub-par use less chefy. Keep up the good work!

Would this freeze well, like if I made it in two pans, eat one, and freeze one The only thing I would question is freezing with the sour cream

I’ve made this casserole for yearssometimes using corn tortillas but also flour tortillas works very well for something different.
