Lemon lover here! Box cake mixes are 2 for 1 in many places right now for the upcoming Easter holiday, so stock up and be sure to get a couple lemon flavored ones. I make mine in a bundt pan, pour in half the batter, spread a can of blueberry pie filling on it and top with rest of batter and bake. Frost it with a can of cream cheese icing heated in the microwave til pourable, and zest a lemon all over it.

My sister makes this fabulous blueberry lemon cream cheese pound cake that's to die for. I'm going to be making that tomorrow. It calls for lemon cake lemon pudding cream cheese that's not the whole recipe but it is awesome. By the way I love lemon everything I just eat lemon. lol

ZOI lemon Greek yogurt is incredible! it's not chalky and I eat it like a dessert. I am sure if you mix it with cool whip it would make a great Mousse.

If you’d like, a little extra lift to the cake, you could add a little bit of baking powder too you have a lot of acidic ingredients in the cake
