I have the tomato chicken bouillon and have made the recipe as per your dad. That is a good recipe and so easy to make. But it still bears mentioning your riff on Mexican rice that uses the chipotle peppers in adobo sauce instead of tomato. Still one of my favorite ways to make rice! I have passed that recipe along to friends many times now. So delicious!

Thanks for these yummy looking rice dishes, I'm going to try them but will cut my onion into small pieces. Why do you throw in such huge slices of onion That just seems weird and would texturally gross me out seeing a long slimy string of onion in my rice, lol

One of the oldest busiest basic simple Mexican restaurants (Pitic) in Phoenix, Az. Makes their rice with just tomato sauce and dash of salt. kids love it and, people buy quarts of it to take home. everything else they serve is spicy. lol

We've been making your dad's recipe for 2 years now. We love it. We will try the fresh tomato version this august when our tomatoes ripen. Store bought tomatoes have NO flavor!

That’s exactly how I make it. A Hispanic friend gave recipe to me. The rice continues to steam off the burner and why we fluff it. to stop steaming or it can be overcooked.
