Actually one of the better (simple) ways I've seen menudo made. Just like I make it. I remember menudo making was an all day affair it seemed, by my father or grandmother. Why? Not anymore, no fuss, no muss. Such a simple dish. I agree with you, make it your own, there is no one way to do things. The only thing that is a true dish or recipe is how you remember eating it while growing up. I skip all the unnecessary washing, boiling for several hours usually cleans anything. Always puzzled why people try to wash the tripe to lessen the smell, it's a cow's stomach after all people! I still don't get why people call this hangover soup. A nice greasy hamburger helps me with a hangover, and I've never called them hangover hamburgers. Hmm.

I grew up with Menudo but never made it on my own. I was going to call my mom but having a Mexican mom means no measurements AND I NEED measurements to follow. I found your video and was so easy to make. I followed all your steps and came out so good, just like my moms. The only issue I had was by the end, majority of my water had evaporated. You never specified if it was suppose to be covered so the last 45 min, I covered to prevent losing more water. I also wasn t sure after it came to a boil, if the menudo had to be on low or med heat during the 2-3hrs of cooking. I kept on med-high uncovered which is probably why I lost so much caldo. However, this will definitely be my go-to recipe. Thank you for posting.

your right, make your own recipe as you make more and more. I like mine spicy. i use a packaged onion mix. a can of Pato hot chile sauce. I never let the tripe boil. bring to boil and simmer. scrape off floaters and fat and foam. taste test after about an hr to see how soft the tripe is. i like mine a little hard. last 10 min add the hominy. serve with chopped onion, hot tortillas and cilantro and some salt on the side. some like calves feet in the menudo but I didnt like it. some Mexicans don't use hominy. If it's spicy enough it will make you sweat the booze out of you if you are hungover but i just think that's a wife's tale. adios. thank you

I just throw a hole onion and a head of garlic Add bay leaves in a metal tea spice ball along with hole 7 black pepper and 3 cloves. Add 2 consume of res. Salt and live it on low all night For the sauce Toast 12 guajillos pepper 4 anchos pepper 3 Morita or 6 if want it spicy 4 garlic Put them in hot water Frie half an onion and add to the toasted soft peppers in blender Return blended sause to pot where you fried the onions add salt and sauce is ready Wash all the dishes and enjoy in the morning Prepare the pepper sauce at night as well and in the morning add it to menudo.

I made menudo for the first time and after going through different recipes on line I found your easy Menudo recipe was actually easy. I have a small family so the recipe fit exactly what I needed. It was easy to follow and I like your how you share your opinions and give the viewers the options on what we prefer. We are in quarantine and since we can t go out eat I am trying new recipes. Thank you for posting and sharing your cooking skills to people like me. I like hominy in my menudo too.

I know it seems like a no brainer But really, I had always used a knife like all the other family and friends I know. And boy, can that be a challenge if you don t have an extra helper Sometimes the easiest things do not come to mind when you ve been programmed to do things a certain way. I can t tell you how much this has helped me. I grew up with hominy in my menudo too

I love all your recipes and I thank you very much for making videos. But to my taste and the Menudo you got to put some patitas in there. Whether you could come together or separate cuz some people like them and some don't. But every time I get a chance I do make your recipes maybe they don't taste as good as yours but I love them anyways God bless you and your family

DELICIOUS! Just made this today for the first time: ) I felt mine needed more Chile Guajillo so I used 12 total and added 4 Chile arbol for a little more spice. It was perfect! Probably because I used a larger portion of hominy and tripe ( 5lbs of tripe and 1 large can of hominy) Everyone tore it up! I only have 1 bowl left.

To avoid the shit scent of the tripe on your hands use glove other wise start with garlic! Start with the basics for the broth. Crush garlic and remove some skin from garlic. Then do the meat. Get your meat from a carniceria or butcher. They have it cubed. You may have to cut some pieces. No oregano no lime!
