While I may just be a plain old Aussie mama it doesn't stop me from encouraging my family to try new things. I have never been, nor will I ever be, a two veg and meat mum. Which is why I raised my children to appreciate food in all of its varieties. Especially the taste of other countries. Plus: I am vegetarian, along with two of my children. Lately, I have been wanting to try different rice recipes after buying far too much - on a whim - while shopping. Your recipe was the one I felt most comfortable with trying first before anyone else's. So. at 4. 23am I got up to make this dish, attempting to be as quiet as possible. I followed your instructions to the letter and now I am waiting patiently for the rice to be cooked with only the sounds of my stomach to keep me company. This is going to one awesome breakfast surprise for my family. They are quite used to my eccentric behaviour so I am pretty sure sure they will love this surprise, too. Ps. It's winter and has been a little chilly, so what better way to wake up is my power of reasoning and logic. Not entirely sure if that is right but it's smelling so good right about now and that's good enough for me. Thank you so, so much for each and every single recipe you share. I can't wait to try them all!

30 seconds in and it's already completely wrong. Love you efforts and your voice. but. .sooo wrong you only use REAL. garlic onion a tomato and salt. With one chicken bouillon Cube and blend it up ( I've. Never ever seen a Mexican use cumin ever). we dont. nor Garlic salt. Nor onion salt and absolutely no pepper is added to Mexican rice. Also you wash the rice first, you brown it, you blend the tomato onion garlic salt and 1 bouillon Cube. NOT the tomatoe kind. After you've browned the rice blend all those ingredients with water and pour it on top of the rice. if you do not have a tomato then you can use a little tomato sauce. cover the rice and you let it simmer slowly until all of the wetness cooks out of the rice and. Do not EVER stir the rice one single time. and that's it. Bamm! Authentic Mexican rice. It should be a light light orange color and fluffy.

Great recipe. like you say, good place to start. An ex-gf taught me this 40 yrs ago and i've been making it ever since. One compliment to you is I notice when you put your tomato / broth mixture in, you scraped every bit of it with your spoon. EXCELLENT. I see so much waste by these demos where they just dump it and there's so much still left in the bowl or cup. That's why I don't watch the pros on TV. They've obviously never had to account for every penny spent on food. Nice vid, thanx for sharing!

Best. Mexican. Rice. Ever. Wow! - like others, I was stumped on how to make rice like served at my favorite Mexican restaurant. (The Knorr tomato chicken bouillon is the key, in my opinion. I got the spoonable, loose kind. ) I have made this four times now and it turns out fantastic every time. and so easy. All I knew from 30+ years of cooking was the box or pouch kind of 'Spanish/ Mexican' rice from the grocery store. whoo HOO now I know how to make this at home! Thanks SO much!

At our house, we use Knorr Caldo Con Sabor de Pollo (powdered chicken bouillon) plus ground garlic, tomato sauce, fresh onion, four or five green bell pepper slices and include three or four pepper seeds in rice (instead of bell peppers, you can add three or four serrano peppers. Onions and pepper can be removed once cooked. Serrano peppers can be served and cut up to those who like it HOT. Some people even add green peas, potato squares, and/or cut carrots.

An electric wok works great for similar rice recipes of all types. I have two Prestos, with four different size lids/covers, for making a good seal, depending on the volume (I like to keep a minimum of space above the cooking liquid/rice mixture. If you are vigilant, you can brown the rice quickly at high temps. I have a good selection of various shaped silicone spatulas, turners, scrapers, etc, and I keep my hands, wrists, and elbows moving. lol.

I love the voice but DAMNNN you make things seem so simple and easy. which it is and will try this rice recipe. I saw the other one but I like this one with the crushed tomatoes. I'll try it maybe using 1 1/2 water. Maybe lowering the water amount with the added liquid of the crushed tomatoes may just balance out the moister on the rice when done. You are the BEST!

My mom would pretty much make it he same way. When the rice was toasting she would throw in chopped garlic and onions. She would then add one small can of Hunt's Tomato Sauce and then fill the empty can with water twice and pour that in and bring it to boil and then cover and simmer. I never forgot the smell of toasted rice and garlic! Thanks for sharing the video!

i've always been curious. is there a reason to not lift the lid while it's simmering? i've always heard that as not a rule but more like a law lol. does it do anything differently or is it like one of those things we learn is the way to do it? like when your parents say you can't turn the light on in the car because it's illegal lol
