Today I am cooking at home and making cheese enchiladas with an easy homemade enchiladas sauce. INGREDIENTS 10 oz ( 283 g ) queso fresco (crumbled) 10 to 12 oz (283 to 340 g) shredded cheese of your choice 14 to 15 corn tortillas 2 to 3 scallions (chopped) 1/4 tsp black pepper ENCHILADA SAUCE 1/4 cup (60 ml) cooking oil 1/4 cup (35 g) all-purpose flour 2 Tbsp (12 g) chili powder 1 Tbsp (10 g) chicken bouillon powder 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp ground cumin 2 cups (473 ml) water 9 x 13 baking dish Bake at 375 F / 190 C covered for 30 to 35 minutes

I m on a low sodium diet. Like 1500 mags a day, and I love enchiladas. We used to make chicken enchiladas with Green Chili sauce. We mix a small can of Green Chili sauce 50/50 with sour cream. My wife used flour tortillas, but corn tortillas are lower in salt, so I want to try that. My problem with red sauce is everything I ve tried outside of a restaraunt was bitter as hell. My buddy s ex wife made it buy reconstitution dried red peppers, like the kind you see hanging. She boiled them, removed the skin and seeds and added sugar and vinegar to the meat of the peppers, but at the time they were still happily married and she was very secretive about everything she put in the gravy, or sauce. But they were among the best I ve ever had. I asked for the recipe, but that didn t happen.

May make these tonight. I have alot of leftover cheese from making pizza. I usually make a tomato based sauce with chipolte in adobo and my roommate makes green salsa. I love them both. Am now trying yours but I don't have chili powder. Can I use smoked paparika, cayenne pepper, with onion powder and garlic powder?
I have a bit of steak too. Super thin cut. May cook it quick and chop it into tiny pieces and add it to the cheese.

Thank you for the enchilada sauce recipe! I have used can for years, but this looks simple enough for even me to make it. I bet homemade tastes better as well. I will be trying your yummy looking recipe later this week!

I literally just finished making the tex-mex beef enchiladas and looking at your new cheese enchilada video. You can never have too many enchilada recipes. Sooo good! Thank you!

Love your recipes, can we freeze the cheese and beef enchiladas. I am just one person and would love to hv some waiting in the freezer waiting. Ty
