Today I am cooking at home and making stuffed sopapillas. The filling and toppings are versatile but today I am making chile colorado. This is a requested video and I hope you like the recipe. Ingredients for sopapillas 2 cups (260 g) all-purpose flour 1/2 tsp salt 1 tsp baking powder 1 Tbsp shortening or lard 1/2 cups plus 2 Tbsp (148 ml) CHILE COLORADO 1. 5 lbs (680 g) boneless pork shoulder 1/2 tsp salt 1/4 tsp black pepper 2 tsp chili powder 1/2 tsp onion powder 1/2 garlic powder 1/2 tsp ground cumin 1/2 small onion (chopped) 3 cloves of garlic (minced) 2 dried bay leaves CHILI PUREE 3 guajillo chiles (cleaned and softened) 1 ancho chile (cleaned and softened) 1 1/2 tsp chicken bouillon powder 1/2 tsp Mexican oregano 2 cups (473 ml) steeping liquid or water TOPPINGS shredded cabbage salsa of choice cheese of choice Mexican sour cream

You know what little thing from the Mexican restaurant I just love. I love guacamole salad in a fried tortilla bowl. Well that s what this reminds me of. The fried tortilla bowl that they make to put it in. I think I m going to make these and fill it with thinly sliced iceberg lettuce, guacamole, and shredded cheese! Then I ll just have like little guacamole salad packets of wonderfulness!

Oh that made my salivary glands dance! Sadly I am not familiar with chilies. I don't know how hot they are. could you help me with that. my husband and I are wusses when it comes to hot but I bet the flavor of this dish is amazing!

I also didn't realize these were savory. I've always considered them a sweet. Basically it's a fried flour tortilla triangle stuffed with whatever you want. Thank you so much for opening my mind!

say you dont have a blender. can you use a motor and pistil? my mom dosnt have a blender she hand grinds everything how do i do this for her if i dont have a blender?

I m gonna try this! That looks so yummy! I just have a hard time as I don t have anywhere to purchase the chili s. Maybe I will see if I can purchase online.

Those looked really good. I ve only had sopapillas with powdered sugar and honey never with meat. will have to try them with meat.
