Today I am cooking at home and making crispy chile rellenos for one. I am keeping things simple and crispy. I am going to char roast 2 poblano peppers, stuff with cheese, and fry until golden brown. The stuffing is versatile and you can also serve with a tomato broth. Ingredients 2 poblano peppers 2 large eggs 3 to 4 oz Oaxaca cheese 1/4 cup all-purpose flour 1/4 tsp salt 1/4 tsp onion powder 1/4 tsp garlic powder 1/8 tsp to 1/4 tsp black pepper cooking oil for frying Peg: Looks so absolutely delicious! I was taught to make them this way by a lovely Korean lady who owned a Mexican restaurant! I used to buy whole green chiles in a can and it was so easy but they are hard to find now. I will follow your recipe using the grilled peppers. Thanks Mama!

Hi. This is my absolute favorite Mexican food, besides of course tortillas and beans which I was raised on, they were staples in my grandparents home.
If I cannot find the Mexican cheese that you used, what American version can I use? Any helpful hints you can give would be greatly appreciated!

It's interesting to see the regional differences of a dish. In Southern New Mexico, we often use Big Jim or Sandia green chiles, stuffed with Colby Longhorn style cheese, eaten with no broth. You did an excellent job with your batter, I so enjoy seeing how you cook!

I wrap mine in egg roll sheets and it comes out really nice. I'm trying that cheese next time though! I never know what Mexican kinda cheese to use and in the restaurants it's always so yummmm! So thanks for the share!

Wow! Those are perfect and I really prefer it without the sauce too because they usually use too much sauce and it takes away from that beautiful crispy exterior!

Poblano peppers are good, but, try them with Hatch green chilies from New Mexico. The flavor is so delicious.

I know I'm going to catch hell for this, but I loooooove rellenos and you know what I use? Store-bought extra crispy tempura boxed batter mix.
