Ok I could eat this every day. I do the oil thing sometimes, other times I just microwave, and sometimes I put them on open flame. I like how a little bits of char looks when i do chicken and a green enchilada sauce.

Yass! So delish! I usually pan fry the potatoes in little cubes and use flour tortillas. This is my son's favorite dish! I'll definitely give this way a try, the smashed potatoes version looks easier. Thank you!
