Chimichangas Easy Chile Con Queso Recipe Picadillo

Today I am cooking at home and making homemade chimichangas filled with ground beef picadillo and smothered with chile con queso. The picadillo is a Mexican ground beef hash that is great for burritos, tacos, chimichangas, or even enchiladas. The chile con queso is a semi-homemade version that is easy.
Picadillo
1 lb lean ground beef
1/2 small onion
1/2 small bell pepper
2 cloves garlic
1 Tbsp beef bouillon powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground cumin
1/4 tsp black pepper
1/4 tsp salt
3/4 cup water
CHILE CON QUESO
1/2 Tbsp unsalted butter
1 jalape o
1 Roma tomato
1 Tbsp fine diced onion
1 clove of garlic
1/4 tsp smoked paprika
1/8 tsp onion powder
8 oz Velvetta cheese
4 oz sour cream
1/2 cup whole milk
SOFT FLOUR TORTILLAS
3 cups all-purpose flour (400 to 410 g )
2 tsp baking powder (7. 5 g )
8 oz hot water (236. 59 ml )
1/3 cup lard or shortening (65 g) use only 1/4 cup (59 ml) if using oil
1 tsp salt (5 grams salt) use salt of choice
For burrito size tortillas divide the dough into 6 to 8 dough balls
light: I typically like and use use a lot of your ideas because you do have a lot of good ideas and you demonstrate them well but isn't it a bit funny that you put BouiLon in your TorrrrrrtiLLa mix? That is actually a bit annoying. sorry to say, but I am Mexican too and I either use a Spanish or an English dialect. I do really like your shows otherwise though! Date: 2021-03-18
