Today I am baking bbq spatchcock chicken for dinner. Butterflying chicken is a great way to cook a whole chicken in a shorter amount of time. Season the chicken with your favorite sauces or dry rubs to preference.
Ingredients
3. 5 to 4 lb whole chicken
1/4 cup to 1/3 cup apricot preserve
1 chipotle pepper in adobo sauce
1 large lemon
2 tsp seasoned salt
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 Tbsp Shaoxing cooking wine
1 Tbsp soy sauce
1/4 cup cooking oil
a handful of fresh parsley
