Today I am making Ranchero Beef with potatoes just like my grandmother's. This is a flavorful Mexican-style beef simmered with tomatoes, onion, jalapeno, garlic, and a variety of seasonings.
Ingredients
1 1/2 lbs top round beef cutlets
4 Roma tomatoes
1 small onion
1 jalapeno
3 to 4 cloves of fresh garlic
2 medium Russet potatoes
1 tsp ground cumin seeds
1/2 tsp cracked black pepper
1 Tbsp beef bouillon powder
1/4 tsp dried crushed Mexican oregano
fresh cilantro (optional)
salt to taste
