Today I am making chicken and cheese enchiladas topped with spicy red salsa. The sauce for this is a tomato jalapeno salsa with differs from the traditional guajillo chile sauce. Dinner is gonna be good! Ingredients 5 Roma Tomatoes 1/2 small onion 2 cloves garlic 1 jalape o 1/2 cup water 2 tsp chicken bouillon powder salt to taste 15 corn tortillas 1 lb cooked shredded chicken 8 oz pepper jack cheese cookin oil for griddle Mexican crema Cotija cheese

There is a Mexican restaurant in a nearby town we used to go to. I always irdered the same thing enchilada suisa. corn tortillas with chicken and a white cheese sauce over them sprinkled with black olives. Oh my goodness! Would love to know how to make that white sauce!

Please explain about the tortillas. Those are those super soft ones I've seen. Are they pre bought raw ones? There are whites ones that are super similar to the yellow at the regular grocery. I want to get those exact ones.

Yummm. and now I'm hungry. I'm the biggest chicken when it comes to making salsa, I've only made some once. I'm almost 60! I've not made my heritage proud. At. All. Haha.
