Here is the simple way I make capirotada for my grandmother. There are so many ways to make this Mexican bread pudding, but this one is my abuelita's favorite. Ingredients 6 to 8 bolillo bread rolls 2 large bananas 15 oz can crushed pineapple 1 to 1 1/2 cup raisins 10 oz Oaxaca cheese (shredded) 5 to 6 cups water 10 oz piloncillo 2 to 3 cinnamon sticks 1 Tbsp vanilla extract pinch of salt 9x13 baking dish 2 Tbls butter

This was one of my childhood's WORST food memories. Mom used to make it once a year. Same with grandma. Smelled real good, but the look of it would make me lose my hunger. Truthfully. It reminded me of something I don't even want to mention here. It was just gross to me.
Needless to say. I never honored this tradition as an adult.
Big pass.

I didn't grow up eating capirotada, and no one in my family ever seemed like it, so the first time I found out what it actually was I thought it was the most bizarre thing in the world just because of the cheese alone. Not too long ago I also learned about marquesitas which also uses cheese

You know the more you make traditional dishes like this, the more I wish I was still together with my ex. Capirotada is one of many dishes I learned to love. OMG I can see it with a side of vanilla ice cream.

It must be really nice and comforting to have it warm. It seems easy to chew and digest; I would gladly welcome that in my kitchen. I imagine the house smells divine with those flavors.
