Today I am craving baked enchiladas and these hit the spot every time. I am making cheese enchiladas smothered in chile con carne Enchilada red sauce ingredients 1 lb 80 / 20 ground beef 1 Tbsp beef bouillon powder 2 Tbsp light chili powder (I use Fiesta Bolner's Brand) 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp black pepper 4 1/2 Tbsp all-purpose flour 16 fl oz water salt to taste Ingredients 14 corn tortillas 1/3 cup oil (for softening corn tortillas) 12 oz cheddar cheese (or Colby jack cheese) 1/4 diced onion (optional) 9 x 13 baking dish

For new years I had gone to New Mexico, and I knew that their Mexican food would look different but I just wasn't ready to see their weird stacked almost lasagna like enchiladas, I'm sure it tastes great but I just can't live without my Tex-Mex style enchiladas. I'm from Corpus, and these remind me almost exactly of Kiko's Mexican Restaurant and Cantina, best enchiladas in town if you ask me.

Oh gosh this looks so good, we literally just finished off a batch of chili and a batch of enchiladas, but I bet I can get away with making this in the near future. I use green onions though, I like regular onions but the people I cook for don't, so we compromise And I'm glad you used the cut up cheese sticks because I'd forgotten I used to do that years and years ago, so much easier!

My mom would always make her enchiladas w chili con carne. I always make her recipe. Nvr tried it w flour. I will def give it a try. Ppl look at me so strange when we go to a Mexican restaurant and I ask do they have chili con carne. We are Texas bred. Everyone doesn't like a mole on their enchiladas. I miss Texas. Thanks for sharing.

These enchiladas look delicious and look easy enough for me to make. They kind of remind me of the enchiladas that I used to get at Los Tios in the Meyerland area of Houston. they had enchiladas with chili con carne. Thank you for sharing.

There was a local restaurant that had cheese and onions enchiladas. Cheese and green onions. I have never found another restaurant that does that. That restaurant makes popular Mexican taco sauce and other foods.

These look delicious! Great idea, I never thought about using cheese sticks, but my mom taught me to dip the side of the tortilla in the chili sauce before rolling it up with cheese. OH YUMMY!

Going to give this one a try as well. My mom is a Tejana and she loves to add onion on top of her enchiladas. If she orders at a restaurant she ll ask for a side of onion to add on top of them

That looks mighty tasty! It also reminds me of the cheese enchiladas my mom used to make when I was a kid. That, and her blueberry muffins, are the only two good memories I have of childhood.
