Way too much breading. I would've diced the veggies fine. Grinded no more than 12 saltines and left the crab a little chunky. Fold it into the mix instead of blending it all into a peanut butter mush. The last step is fine if you're deep frying.

Wow! Imagining how that must taste is almost enough to make me want to break my clean diet of mostly raw fruit and veg and make it. I haven't had fried or even baked stuffed seafood in 15 years.

Looks good. I think I will use imitation crab meat though, seen as you process it to a paste. Save the lump crab for crab cakes where the crab is left in lumps.
These look so good.

Mouth feel matters to me. I don t think I would put everything in the food processor at once. Definitely hand stir in the crab pieces. I m afraid it would be too squishy in my mouth.

I was concerned the shrimp wouldn't cook due to the stuffing. Is there a way to be completely sure the shrimp did in fact cook thru?
Love all of your recipies BTW.

After stuffing the shrimp if you put in fridge for about 30 minutes to get rid of moisture it makes them more firm during final breading and frying

Turning that lump crab into a paste hurts my heart. That being said, they look delicious. Maybe use less expensive flaked crab or fake crab
