I think this was a great video! I would only add that it would be nice to know what the stink beans taste like. I know in your other videos, you have talked about them, but am wondering now what the flavor is like and how I could substitute in Canada for this special ingredient. They look a bit like a fava or Lima bean, but I suspect they don t have the same flavor. Thank you again for this video! More like this would be great!

I love Indonesian beef rendang but I add extra Scotch Bonnets for an extra kick and I find that Scotch Bonnets adds fire without making the dish bitter unlike some other chillies. I can't get proper Bird's eye chillies in the UK, the ones I find labelled as Bird's eye are twice the size and not spicy. Never a fan of the petai though. I don't mind garlic breath but petai breath is on another level.

Uh oh. I think I can smell it from here XD. You can add some spring onions to add some fragrance and color, and also some pulled chicken. Some street vendors sometimes also like to put some emping or melinjo chips. Home-cooked fried rice is the best fried rice! Well done sir!
Don't forget to drink some coffee after eating pete, this will remove the odor afterward. Lol

Makassar ( South Sulawesi) = Nasi Goreng Merah, coto Makassar. Mark you never eat this food. you can look at google hehe.

The way you cook is exactly similiar with abang nasi goreng. I think you're watching them carefully so you copy them easily. Anyway, if you cook without sambal, you can just use grinded garlic and shallot. It's also tasty without spicy taste.

You're outstanding man. I'm indonesian. i think your recipe is more close to Javanese Fried Rice style. Looks so yummy and using Stinky beans ( Pete ) delicate and silky texture superb interesting and makes me starving now 1 am

I've learned how to make fried shallots, thank you Mark! It'll be great if you tried making a Ghanaian dish, maybe jollof rice, or fried plantain with beans, or maybe even banku and soup if you're feeling ambitious!

The cracker you mentioned in 8: 06 which made from melinjo is called Emping. This is just one variant of the cracker for nasi goreng.
Prawn crackers also work fine with some variant and colours. Emping is one of them.
