Just dined there last week. Although, the experience was awesome, the staff was superb and the concept was different, the flavors to me were horrible! They may represent different altitudes of-Peru but not the flavor! I wanted to love Central, but unfortunately it was the worse food I-ve ever had! The paiche was the only plate I actually liked but the rest was absolutely disgusting! The last three deserts were O K, but for the money and the hype - I just don-t get how it-s that highly rated. At the 8th dish i had to go to the lady-s room! An expensive stomach ache!

Virgilio is obviously a genius, and he is putting Peruvian ingredients on the map, but his creations are not necessarily Peruvian food. Peruvian food is delicious, but most of it is a huge mix of Chinese, Japanese and even African cuisines; and most of the best dishes do not use most of the ingredients that Virgilio serves at Central. Virgilio could go anywhere in the world and use each country's ingredients and make masterpieces, but that doesn't make them Peruvian just because he is from Peru.

We ended our Peru trip with a meal at Central & it was amazing to see diverse ingredients from all over Peru represented in a single meal (15 courses. Even the non-alcoholic drinks pairing was amazing. No other restaurant can compete with the sheer uniqueness of the experience at Central. A must-try if you-re in Peru. It-s incredible!

Pretty amazing, and something we've lost in the modern age. Really would like to see more of this all around the world. Not just farm to plate, or -buy local- it's really about looking locally, historically, perhaps bringing back the foods and ingredients lost to modernity. So much lost but so much to regain as well.

I-ve been to Central twice and had both of their tasting menu-s as well as drink menu-s and the culinary journey was incredible. The environment of the restaurant was extremely modern and elegant and the food was delicious and sophisticated. Definitely going back again soon for this one of a kind experience.

To live his life whew I mean he has completely become his passion which is amazing. His restaurant is like a Willy Wonka chocolate factory and he is the man behind the operations. Much respect to this man and the time and effort he puts into being great at what he does.

When i hear the saying 'we are standing on the shoulders of giants', i think of people like him. Collecting, Conserving and creating new out of a huge cultural fundament. Peru is lucky to have him, even though not many people of Peru may be able to afford to dine there.

I wonder what the profit margin is for this restaurant. Doing some research each tasting menu is about -180, only 40 people allowed in for tasting that's -7200 a night. It's crazy to think a restaurant is making over -200k a month.
