While we are on Mexican food, can you teach or show us how to make, I think they are called tacquitos? I had them for the 1st time when I was in southern Ca. Quite a few years ago. I remember them being on very small corn tortillas, tightly rolled up with a piece of long mystery meat running down the middle. Not exactly sure what they were but boy they were awesome. Please teach me as we dont have them here in N. Y. with this corona virus it may be my last request. Thank you most awesome gentleman.

Sam I Have Been Wanting to make some delicious Cheesy Hashbrowns with Ground beef and i dont know Anyone i could think of Who Could do it better But You. i've been making alot of these beautiful dishes that you work hard for. and man oh man does my family now love my cooking. its to the point where they are saying come on sam the cooking guy make dinner laugh out loud haha. please make this dish: ) your fan Rocky! oh and cant wait for the knife super excited.

I make this dish with rotisserie chicken. I find no need to dip the tortillas into the sauce or thicken the sauce. When you pour the sauce over the completed enchiladas, during the bake the tortillas absorb the sauce. Also I use sharp cheddar cheese. When serving the dish I top with chopped cabbage, it adds a nice crunch. Mixed in with the cabbage I add a bit of mint. Just enough mint for an occasional taste to excite the palate. Please no sour cream, ich.

Made this for Cinco de Mayo. Great flavor. Probably used more spices than you did and added smoked Chipotle with sauce. Had it leftover from your last recipe tried and loved. Have to strongly disagree with use of brisket. Unless the brisket I got from local grocery store was really poor grade, brisket idea was bad two ways. First, it was really tough to cut. I had to take over cutting from son. Worse yet, it was tough to chew. Love your videos.

I love this so much! I will definitely do this soon. At present when I'm really lazy I use Ragu with ground beef on the bottom of a glass baking dish, then those Reser's burritos Baja Cafe red hot beef from Costco, then more Ragu to completely coat and empty the jar and lots of grated cheddar, lots. I usually bake to make it really dark which gives the cheese a great flavour. Thanks again!

I have a side hustle that I do sharpening knives, I know how much you like to cut yourself. Can you please send me that custom knife you had made so I can turn it into a razor! For enchiladas, flour or corn tortillas isn't usually a simple matter of preference. When making enchiladas, flour tortillas tend to absorb too much liquid and make a mushy doughy mess instead of holding together. I think what you made resembled something more of a drenched mushy burrito.

Subway Sandwich Friday is Awesome. Rather than adding a thickener to the Enchilada Sauce just thicken it with heat. Cook it a longer time, and don't put additives in the Enchilada Sauce. The Enchilada Sauce should be Chile, and Cumin, and not Starch, then you put it on the Corn Tortillas.

My mouth was watering all the time while watching this video, that I just had to go all the way to the store buy what I need to make it. That's how bad I wanted to eat this. Btw it was delicious. Thanks buddy my husband and I really enjoyed it very much.
