as others have said, the pit is to keep from turning brown.
Pro guacamole tips from someone who lives in south texas in an 87% hispanic town:
1: for the lime, just cut off the end of the lime and squeeze that in. It's the perfect amount
2: instead of salsa, use one small roma tomato and a charred jalapeno (or 1/3-1/2 of a charred poblano if you don't like it hot) minus the seeds. cut them in about 1cm cubes. It will taste SO much better and look better too.
3: ADD CILANTRO! It brings so much good flavor and it's dirt cheap and very easy to grow.

Fun video with the bait upgrades. I like the minnow trap - the cup was never going to work! :) When I see you and Scott sitting on the log, I see two bushy bearded fishermen. I'm waiting for the day when your son is old enough to join you with his own big bushy beard, sitting on a log doing a video with you. :)

By the way when you cook a trout just leave the bones in and then when its done grab the spine on the side that is closest to the head and just gently pull it out by wiggling it side to side easily. Will come out no problem.

the whole object of using the bacon is to keep the trout moist and flavor it. the bacon served it's purpose. The trout would be way over done before the bacon gets crispy. nice job on the video
