Another hint for you Victor. After shapening your knife on either a stone or a steel, if you want it REALLY sharp, either strop it on leather with some fine polishing soap or hone it on a slab of slate. Yes, that blue grey material they make roof tiles or garden stone paths out of. Be sure to add water - just like you SHOULD be doing with your normal stone - and don't wash off the slurry. It is that slurry which take your knife to a whole new level of sharpness for you.

You can tell this guy is no masterchef: Timetable completely out of whack. Spices are not freshly ground. The way he moves around the kitchen. Sprinkling spices at random. Breaking pasta. Using overpriced branded pasta. Spinach sits on an oily puddle. He could serve his grandma a turd and she would enjoy it since it doesn't taste fishy.

Spanish on the grill is surprisingly good. Leave the skin on the fillet. make a V cut to remove pin bones and some of that bloodline. Start skinside down and season with Glades.
Have cooked trout and Macks the same way at the same time, and all who try both rave about how the mackerel is so good and much better than the trout.

Viktor -- You've got mad kitchen skills, I especially liked this recipe since I'm now living up in the Panhandle and they catch lots of Spanish Mackerel off the piers. Can't wait to try this piccata recipe.

Have you tried the Everglades seasoning? Sounds like its pretty good seasoning. Note: Dont put your fresh cleaned fish fillets in a cooler with bloody, etc, ice & water! Yuk!
