I made a fish head soup using the remains from mutton snapper, mangrove snapper, yellowtail snapper and black grouper! Here is Capt. Ryans charter info: You can call him at 305-619-2126 To make fish head soup: 1. Make sure fish carcass and head is cleaned thoroughly, descaled and all gills blood removed. Add some olive oil to a pot and cook fish remains for few minutes over medium heat. Add enough water to cover your fish. 2. Add veggies and herbs if your choice. I used celery, parsley, garlic, thyme, black peppercorns and onion. 3. Bring to a boil reduce heat and simmer for 1 hour. Strain stock through sieve. Pick off any fish from bones and set aside. 4. 4. Bring strained stock back to boil, add potatoes over medium heat. Cook for 10 min. Add diced, carrot, parsnip, leek, celery, and other veggies of your choice. Cook until soft. Add 1 can diced tomatoes. Either season with vegeta seasoning to taste or add salt to taste. 5. Serve soup with set aside fish! link to Vegeta:

Hi guys love your stuff.
Just a quick tip next time you do any type of fish soup/broth, try using a mouli to extract maximum flavour from your bones and meat, trust me it will change your cooking from good to outstanding, I'm an ex chef and I used to do this with beef bones chicken carcass and fish, absolutely transforms the result of the same recipe you made. If you were to make identical recipes and only change two things. It would have to be frying off the carcass in the pan and then roasting in the same oven proof pan on very high heat for 15 minutes and then back in the pot to boil and simmer and then mouli when everything is cooked fully, pass through the sieve several times and then use a cheese cloth to drain all the liquid and then proceed to add all your other ingredients. Thank you for soups and showing folks how much theyre throwing away. It hurts me to see something lose its life to only be half utilized. These videos really satisfy my mind as so many just chunk the heads and carcasses into the water. I dont make soups out of all my fish heads and carcasses as I use some in my garden as fertilizer along with leftover bait fish but Im still utilizing the whole fish. Another great vid bro. Keep em coming.

Just came across this video because I have several heads and carcasses of black sea bass (New Jersey) and didn't want to waste then. I'm going to try this recipe. I've been watching you and Brookie for a couple years and love your stuff and your passion. I do most of the same stuff but unfortunately in NJ. Black sea bass are the closest thing I have to the snappers you have so I'm going to try it. Thanks Victor! Keep it going. Doug.

When I have made fish stock,
Clean fish head though, scales, eyes, gills, blood, ect.
With a meat saw, hatchet, meat cleaver split and quarter the heads and backbones.
Season water and boil the smaller chopped up pieces for as long as it takes to free up, dissolve the fish from the bones.
Strain the stock, should not have to pick fish, minimum effort.
Make whatever with stock.

Caribbean people dip the whole fish heads in a mix of lemon and water to completely remove any fishiness taste for couple minutes prior to any cooking. Even though those fish were fresh, next time try that lemon-water mix. I promise you'll see the difference. Everything else can be done as you have shown in the video.

There is a version of white soup, you fry the fish with ginger, use peanut oil. then splash water in the pan, use cold water, fried fish will give you white soup, the rest is the same. It taste a lot richer than the clear one. Same fish, same veg, different taste.

I want to thank you for showing this. I get really depressed, even angry, when I see anglers throw the carcass and heads away. Not only is it delicious, I think in this day and age of scarce resources and environmentalism, we have a duty to use THE WHOLE FISH.

vegeta can be found in many russian/international stores. my parents are from Belarus and vegeta is litterly in every one of our meals. its delicious to sprinkle it on avocados and sunny side eggs.

Hi Victor. Great show. Many US blogs have good fishing, but you are one of few who can actually cook. No Everglade rub-throw it in the pan, but nice, simple but varied dishes.
