I really hope you own several deep-freezers.
AND they are mostly full.
WHY?
A friend of mine grew up on an extremely large farm.
A storm would come through about once a month.
One of their cows would get struck by Lightening.
They'd go out once the storm would pass to check on them only to find one dead.
They'd load it up, bring it back to the shed and start butchering.
They had 6 upright freezers in the shed.
It's got a strange taste to it but, nothing Ketchup doesn't fix.
Freezing with a marinade too.

Beautiful mutton catch. So much fun to catch, so tasty to ear. I learned about the brining from a commercial fisherman who called it achill barrel.
