So I ve been there, done that. The one I kept was almost directly across the Chesapeake from where you were. It was big enough that I distributed the meat among several foodie friends, the challenge being to see who could arrive at the best dish featuring cow nose ray. The verdict? Freakin weird meat. It s beautiful raw but cooks, as you found, to an oddly chewy consistency. Calamari-ish isn t too far off. But bland. As a chef would say, sauce friendly. In that vein I decided to cook some long and slow in a curry, which was definitely the best result. The chewy factor was gone and it took on the flavor of the sauce. No, I haven t kept another since. But if I need a fish curry to feed an army I know what to catch.

Those speckled trout sure looked a lot like gray trout or weakfish not giving you a hard time just trying to correct you. I could also be wrong but I'm 95% sure those were weakfish lol
