These look so good, definitely going to try the casserole and fettuccine. As a side note, i've just started trying to put on a bit of weight and am started to track what i eat roughly to help with that, and im struggling to eat enough calories to be able to put on weight. My maintenance is 3000ish and of course would need more to put on weight. But when most meals are 500 calories or less it becomes hard to hit that even eating sometimes 7 meals a day, any tips?

Omg im obsessed with this casserole! it's my new favorite thing ever! I made it last night with unsweetened coconut milk and red yellow and green peppers since that is what I had in my fridge, and it was SO FREAKIN GOOD! My whole family loved it and licked out the bowl. Thank you brian! I'm super excited to try it with loads of other veggies. Next will be carrots then green beans and maybe cauliflower. WOOHOOO!

Just made the Green Bean Casserole, literally 15 min. after watching this video. Amazing how rich the flavors are with just so few ingredients, love it. Keep those vegan food videos coming for the uninspired, trying to eat healthy followers like myself. Have a great 2018.

You have your avocado slicing technique wrong. Peel the skin off the two halves before slicing, wastes none of the avocado and looks so much neater while being so easy and satisfying! Thanks for the video dude! These meals look amazingggg

Love it, don't let the bambo mat keep you from making sushi my daughter and I did it with just wax paper. Great video Alfredo is on my list. Excited that my carnivorous family have been enjoying my daughter and my vegetarian/vegan meals.
