These type of games aren't challenging they are designed to be tedious to give the feeling that it's a challenge when it's just tedious. Bloodborne and nioh were finished and the feeling was that the games itself were not that difficult it was more of the game having tedious mechanics to make it seem like it's challenging.
These type of games are reminiscent of classic nes games such as battletoads. The game was not difficult it had cheap mechanics that made it seem difficult. Also the original ninja turtles for the nes and countless other nes games in which were tedious. Modern day gaming calls for modern day game mechanics. A game that is designed to be played a certain way by the developers that doesn't give the player total freedom is not challenging but tedious. This is just an opinion but an opinion that is shared by many. Similarly there are many who enjoy these type of games again their opinion.

Hey man, im not gonna sit around here and pretend that im the best at souls/born games. But it really is frustrating when an enemy changes directions in mid air and when some hit you through a wall. Yet you cant even throw a piece of broken pot because youre standing too close to a roof edge.

As an outsider who always thought dark souls was boring by watching it in streams, this doesn't seem any different. Gloomy world with tedious boss fighting as its main attraction. is there anything else to do?

You neglected to mention a vital detail, the water doesn't kill the player in this game as opposed to their previous titles!
