Join Melissa Miranda as she makes pork tenderloin sandwiches with a fish sauce salsa verde on Hawaiian rolls. Don't be intimidated by the tenderloin cut -- it's your friend! It cooks extremely quickly and comes out beautifully tender, as long as you don't overcook it.
Ingredients
Pork
1 -2 lbs. pork tenderloin
1 tsp. garlic salt
1 tsp. Johnny s Seasoning Salt or 1 tsp. each kosher salt and black pepper
tsp. ground coriander
Kosher salt
2 Tbsp. olive oil, divided
Salsa verde
1-2 garlic cloves
lemon, juiced
1 tsp. fish sauce (such as Squid Brand)
Kosher salt
1 cup parsley
1 cup cilantro
tsp. red pepper flakes
cup olive oil
Gravy
cup white wine
2-4 Tbsp. chicken stock
1 Tbsp. unsalted butter
Assembly
1 head of fennel
lemon, juiced
Mini soft dinner rolls (such as King's Hawaiian or Martin's potato rolls) or pandesals (Filipino rolls)
