Chef Anthony Mangieri says he has made dough every day of his life since he was 15 years old. Using the skills he s developed since then, he makes the dough for his pizza at Una Pizza Napoletana, one of NYC s best pizza restaurants. michael: So deja vu watching this. My mother would always make her pizza from scratch and never use bought tomato pizza sauce. It was simply canned tomatoes. My grandparents were also from Naples so I am guessing this technique is a common Italian format from Naples. We never did the starter or the round pizza. It was always the rectangular style grandma pizza. I do prefer the tomato only style since it does taste fresher. A cooked sauce tends to take on a bit too much ketchup texture after the pizza has been in the oven.
No buffalo mozz unfortunately for me. Very expensive and hard to find really.

His pizzas look absolutely terrific, but is the variety too narrow? All we have been shown are variants of the Margherita: topped with tomato, fresh sliced mozzarella, fresh basil, and extra-virgin olive oil. But the pizzeria is named Una Pizza Napoletana, so they apparently (only) make Neapolitan (Naples-style) pizza, a style prepared with simple and fresh ingredients: a basic dough, raw tomatoes, fresh mozzarella cheese, fresh basil, and olive oil. The tomatoes must be either San Marzano tomatoes or Pomodorino del Piennolo del Vesuvio, which grow on the volcanic plains to the south of Mount Vesuvius. No fancy toppings are allowed!

I m sure it s a very good pizza but come on, these lists are always a marketing stunt. There are many great pizzerias in the world, many have best of something some are really good like the pizza of Capuano, Pizza Sustable, Bonci, Sancho, Pepe in grano etc etc, but most of times, marketing stunt
For the untrained costumer this video shows something innovative, different, but this is how pizza is made in Italy for many years.

11: 46 You can tell from how that pizza looks that if you pick up a slice and don t fold it, all of the toppings (including the cheese) would just slide off. I ve had a ton of these types of pizzas (at places that get lauded for their pizzas, and I don t get why that s not seen as a flaw by everyone who holds these places in such high regard.

my question is simple. when you are 50 years old (if i head it correctly) and you are doing the cooking solo, then when is the point when you get an heir to your cooking? since if you dont your food will become stale and old-fashioned and eventually you will drop in quality and food quality to make up for the income you used to make

No. 1 Ranked Pizza in the World source? According to the official Associazione Verace Pizza Napoletana's website, the no. 1 ranked pizzeria in 2022 was Casa De Rinaldi, a historic restaurant in the heart of Rione Alto in Naples in Italy, led by Salvatore De Rinaldi and his son Cristiano.

The investment is remarkable.
The problem with Eater doing these pieces on small, 1 location places, is that they make everyone and their mother be like Damn, I need to go ASAP and then there's literal lines down the block and people camped outside like there's a new Supreme drop.

This guy knows his stuff, one can tell. The comment about being constantly adjusting, and that one is each time more and more aware of imperfections, is how you can tell that he sees what needs to be seen. Thanks to him and Eater for sharing this.

Half of me is upset that s he s in NY and not in Las Vegas! The other half of me knows I would be eating there everyday if he was in Las Vegas! Wow what an amazing looking pizza I can taste it just watching this video!

He's really a master at this craft. You can see his expertise in terms of the attention to detail from the dough, to the pomodoro and even the oven. Well deserved ranking!

#1 ranked neapolitan pizza. not the #1 of ALL PIZZA STYLES. its great pizza, but i am not a fan of neapolitan pizza. ill take a NYC slice 100 out of 100 times.

I dont know anything about pizza. But when he says he has found his life s purpose, he appears genuine.
That makes me incredibly envious.

Huh. best pizza in the world? Most of his process doesn't seem to hold a candle to Chris Bianco (Pizzeria Bianco, Arizona, USA)
