God this is so cringe-worthy. she's an absolute idiot. Japanese mustard. which uses horseradish. and wasabi is in the family of horseradish. so OBVIOUSLY they'd taste similar if you knew your shit. The concepts he's explaining are not incredibly difficult. It should be embarrassing to see how much he has to explain to her, and how much she can't elaborate or relate to Chef Nakazawa. She has no idea what she was even doing. Dining like that is a two-way relationship, and a deeper understanding and appreciation for both the effort/skill as well as the product. This video would've been 100 times better if someone who knew more about the Chef (other than Netflix and Wikipedia research) as well as his vision in food.

I usually don't like to hop on the bandwagon when people are being hateful, but she really did no service to the chef or to the viewers. This presentation and the other omakase video she was in offered no detailed description of flavor profile and the questions she asked the chefs were superficial. I, and I'm sure many other viewers, would take the time and money to travel to these destinations, but I would have to do so on faith at this point because she did not tell me why this is worth flying across the country and spending hundreds of dollars for a single meal. Doesn't really serve any purpose

It was refreshing to see a woman leading this video since the food industry including food journalism is heavily male dominated; however, it did seem that the journalist in this case need to do more background research. Also, it can be difficult conducting an interview with a language barrier- but try not speak over the person in conversation. Other than that it was a great video, and some people on this thread are just incredibly rude.

This girl was horrible. Didnt know jack crap about what she was eating. He basically had to shut her down when she clearly has no idea what Edomae sushi is. Shes the basic b of wannabe sushi snobs. Whats more important, the fish or rice? This is edomae style. You can taste umami in every bite. And her horrific thats just good tuna. Please get a better interviewer next time.

I think the reason we critic her and the other one-short-smug-sentence guy is because we know these goods are amazing. What we want are the history of the food or the place, food itself in terms of flavour, texture, and more. Otherwise anyone can sit in front of the camera eating wonderful foods and shout out words like amazing or hmm wonderful.

. He deserved so much more than that, god she was awful. What is that? what is this? that is good TUNA that is what that is! yeees. Umm there were alot of different flavors, of fish but they taste good. And yes that UMAMI taste yee it had that. OHH its clean and fresh just fish and ginger and wasabi wow i diden't know. geeezh

First time I heard a sushi chef say balance is the most important. This makes much more sense to me then the rice mantra. I always wondered why if rice was the most important part it was always the new guy's job. Shouldn't the most important part be the master's job? Why would you entrust the most important part to a complete newb?

To best a great sushi master, You need a great teacher of course. Also young apprentice need to have aggressive personality and smart as a whip. Nakazawa fell short. Dont get me wrong Jiro trained some of best sushi master out there. Nakazawa is riding coat tail of Jiro. Just watch Jiro's other apprentice. Judge for yourself.

If Nakazawa actually made sushi like this it'd be totally fine. Decent. Too bad he doesn't. I don't know if this is still happening since I haven't been since, but his apprentice makes the sushi, passes it to him, and he puts it together and puts it on your plate.

The reasons as to why may be contained in former comments, but I just can't help but dislike her. I just. I dunno. She means well, but something about her lack of knowledge rubs me the wrong way. With some people, it's endearing. With her, it's just. ugh. Ugh.
