Dear EATER, I get that you have to look for new topic to shoot your video, but I would really appreciate some professional or at least someone who is well familiar with the topic to host. Being a picky ramen consumer traveled to Japan numerous times and pretty much tried out most of the ramen restaurant in NY borough, I can tell you that Ichiran in Brooklyn is no where close to good compare to other places in NY. Broth is overly oily and thick with heavy MSG. I get that most Tonkatsu is thicker and richer, but it should not get to a point where I would not dare to drink it. A good bowl of Tonkatsu should be well balanced with rich flavor, yet still taste pure and light while you pick up your first sip. Last but not least, they don't even have the signature poach egg that almost every ramen shops have; it is a symbol for excellence and delicacy for the ramen as it takes a good portion of time to prepare. All in all, I am just furious that we do not see the truth from the video, and I urge the owner of the Brooklyn franchise to step up his/her game. If not, Ichiran would just get bumped out from this competitive Ramen city of New York sooner or later. Best,

I have lived in Tokyo for 12 years and this girl cant even eat ramen. Her description was terrible and told people nothing except that it was hot. As someone who has eaten Ichiran many times, let me say that the flavor is more of a creamy pork bone with an ultra thin noodle that is very under cooked, the oily soup pairs well with the Al dente noodles. This also matched with the green onion and spices makes for a great balanced flavor profile than mixes tangy and creamy sweet flavors, a total umami nuke. Ichiran exhibits all that Kyushu ramen is famous for, in an interesting and unique setting. There I did your job for you, Serena Dai. You are welcome! Next time do some research and use your camera time more wisely. You looked lost. Sorry for the brutal truth.

I have been to 2 of their locations in Fukuoka and Shinjuku. But it has been many years. If I recall correctly, there was even less human contact then as shown in this vid. Just a ticket machine, booth, and you press the call button for service. Plus I don't think it was a screen divider, but a sliding panel. Food = OK. I guess growing up with ramen, it is a little tough for me to get too hyped out about it at this point.

Serena gets right to the point and doesn't fill this critique with superfluous adjectives. So the broth is really deliciousnot overwhelming. rich and flavorful and envelopingso warm, it really lovely on a cool day to be having a broth like this. You know right away whether she liked it or not. Thats all I need to know.

Flavor concentration booths? I'm pretty sure the original idea wasn't to focus on the flavor, rather the idea was for busy japanese workers to have a bit of privacy while they slurped their noodles at lunch. These little booths are quite common at different kinds of restaurants.

This place is no joke. I've been to both the Shibuya location and now the Bushwick one. The fresh, doughy chew of the noodles is on point. As for price complaints of a 19 bowl of ramen. It includes tip, so not far off from many ramen bowls in the city.

Ichiran is just a chain shop Ramen, like Ippudo. they're good but no way they can be considered the best, everyone knows ichiran in Hong Kong is packed with MSG. if you want real Ramen try a small shop that serves limited bowls every day.

MY GOD THE BEST RAMEN I HAVE EVER HAD IN MY LIFE. HANDS DOWN! I went to their Dotonburi location in Japan last spring. I had extras of everything just so I had the full experience. I have no words. It was that DAMN GOOD.

This is not a gimmick. It's all about you and the ramen with privacy lol. For some Americans eating is about socializing and I'm surprised they made a separate dining table area, but they did it for the business.
