When Laura Patricia Ramirez and her husband first came to Lexington, Kentucky, there was a shortage of Mexican food. To solve that problem, they started to make fresh tortillas for themselves and their friends. From that was born a fully-fledged tortilleria and taqueria, where people from all over Lexington now come to taste tacos like brain, intestine, and tongue

Such a lovely woman. Interesting that she and her husband refer to their clientele as _Spanish. _ I visited Mexico City earlier this year and ate delicious tacos every day for a couple of weeks. and lengua was right there near the top. Very tasty. Never tried tripas or brains and not sure I saw them anywhere actually. Excellent episode.

Very interesting to eat tacos putting cow brain, intestine and tongue. I wonder how taste is. In Korea, we grill cow heart and small and large intestine and eat, which are really chewy and delicious. I wish I could taste tacos with cow intestine. I hope to visit mexico and try real mexican tacos.

Eat here often. Love the food. I'm glad to see them embracing the term Mexington. People have used it as a pejorative, but they are taking away the negative connotations and flipping it. Good for them!

Spanish are people from Spain, they are white european that has totally diferent culture than Hispanic and Mexicans. Hispanic are people from latin america that SPEAK spanish uncluding mexicans.

I get burritos from Ramirez every week, and this is definitely the best Mexican food in Lexington, and one of the best food places in general in the city. Their tortillas are excellent.

The Spanish are from Spain. This Is not Spanish haha it's 100% Authentic Mexica Food. HISPANIC refers to Spain which this food does not have anything to do with.
