2: 08 and onward. I worked in a meat market for 4. 5 yrs and here's a tip for anyone willing to read. The price per pound will change bc ground meat costs more than whole muscle (obviously) & if you request to have just 1lb of something special to be ground upon request, you will end up with maybe a quarter of a pound of that item. About 25-30% or more gets stuck in the head of the grinder that you can't get back AND you're paying generally about a dollar more per pound of said item. My suggestion is if you really want a special item ground up at the shop, make it at least 5 lbs (you might get 2. 5-3lbs of it) or more if you want the cost and time to be worth it. Better yet, buy yourself a small home grinder that has the hand crank. Those things work great for home cooks

NOW, I am wondering about a certain thing. Whenever I bought dried mushrooms from the Asia store there is always this big fat warning on the package like Throw away the liquid. Do not use it. Yet, you use it to make the base of the broth. Are they overreacting? How is are your entrails?

It always strikes me as odd that Tofu is often considered a vegetarian's substitute for meat in the west, whereas where I grew up knowing it as just another ingredient, like chickpeas - to be used whenever you want, no matter your eating lifestyle.

I would strongly advise anyone buying anything that is imported from mainland China(water chestnut, garlic, ginger, Chinese cooking wine in this recipe) because nobody knows exactly what's in it due to the CCP's shady business practices.

I found this is more like a hybrid lions head, the meatball comes with soup usually poached, and deep fried meat balls are usually braised. I like all of them, but would suggest to add the water starch mixture right before you done cooking.

Wow, this is so different from the Lion's Head that I know. In Yan-kit's version, there is no tofu. Instead, to achieve lightness, the pork mixture is thrown back into the bowl about 20 to 30 times.
