These sexy red velvet pots de crèmes are a special occasion chocolate dessert, which are rich and decadent, but still somehow fairly light on the palate. They are super easy to make, gorgeous to look at, and very delicious to eat. Whether it’s for Valentine’s Day or not, these are a must-make for all chocolate lovers.

These seems a modestly sweetened desert. If using a 70% sweet bar 35 grams sugars for the entire bar and the whipping cream as stated this comes in at 12. 75 grams for one of these. If using even darker chocolate like 85% which is around 15 grams sugar for the entire bar the per serving drops to 6. 75. You could sub in a bit of stevia for sweetness and probably not notice.

These look and sound delicious. However with eggs selling for about $9 we just aren't buying them. So many dishes both savory & sweet call for eggs. I do have my mother's WW2 recipe for an applesauce cake. The applesauce replaces eggs. Maybe you can find more desserts that don't use eggs.
We love so many of your recipes & make them often.

Having made Chef John's Mocha Pot de Creme, I can attest to having gotten. lots of compliments. If you're looking for a simple but elegant dessert for a date night, I recommend something chilled like this so it can be done the day before and let you focus on everything else.

Wow! Looks great, and I will hopefully be making this for my sweet now for Valentine's. I've gotta ask: if somebody (totally not me of course) were a novice or not terribly confident in her ability to heat milk and eggs directly on the stove, would you recommend a double boiler

Looks delicious! And, I have all the ingredients except the coloring, which for me is not necessary but if it were I have beets in a can with red beet juice so perhaps that would substitute but I like chocolate color chocolate flavored things.

OK CJ = u know i dont like the foo foo and i rarely eat desserts. .. but if i do, it usually will be a red velvet cake or cookie or a white chocolate. So yea it looks very good - have any advice on how to get a date to make this for

I recommend a flat whisk. It combines the advantages of both the whisk and spatula. I use it for everything that may set at the bottom of the pan like a roux or this.

These look like a cross between a cheesecake, ice cream and ganache. For someone like me I'll have to double the recipe. I'd want four of them to myself.

Im making this for my daughters birthday. Her birthday happens to be on Valentines Day and she loves the color red and chocolate. Perfect dessert.

True original red velvet was a recipe like German chocolate cake with grated beets in for the red color very rustic and earthy in flavor
