for non Americans, what can this hot sauce be substituted with You called it by a brand name so that doesn't tell me enough. Is it vinegar based sauce, like Tabasco Or something tomato based Or something completely different I just want to get the same flavor profile. Or maybe it doesn't matter. Thank you.

Definitely trying this. I'm curious though - would that much browning/cooking of the meat not dry it out completely and make it tough I find I always try to get a good crust going (for sauces, chili etc) but it obliterates the meat and will still be dry in the final product.

Now, technically buffaloes are a different animal alltogether and bison got called buffaloes by mistake, so it's not redundant so much as the city of Buffalo never had any buffalo to begin with.

The browning of the meat technique works really well with almost any kind of sauce made with ground meat. It always takes the sauce up a few levels in flavour.

I bought Bison in Colorado 6 years ago. It tasted very good but I felt I was doing something wrong. Like I was a cannibal or something. It is all mental.

Bison/buffalo can be very difficult to find, and be quite expensive when actually found, so I will presume beef can be substituted in

Chef John, you’re breaking your own rule. If you have to spread it, it’s a spread. You have be able to to dip it to call it a dip.
