The bowl at: 40 Every chef HAS TO HAVE THIS. I got my dad's after he passed away. No weird stuff that was 6-7 years ago, I'm just saying. its indispensable. Get one now and regret it never. Edit: On second look. it is much smaller than I thought, but get one of these a large as you can. This is so perfect for spreading marinade onto meat and veg. You can see all the lines where chef John has whisked or spatula'd tons of thing in there.

Eggplants are the expanded ovary of the female part of the flower (eggplant plants are monoecious and their flowers have both male and female parts. So, the whole myth of female vs. male is BS. I would also like to note that most sources that do suggest you choose one over the other say to choose the eggplant with the oval shape at the flower end to ensure fewer seeds, which is the opposite of what this video suggests.

Thank you for this recipe There is a brand at my local Whole Foods that sells eggplant bacon that is delicious, but super expensive at 10 per package. I'm so, so happy to have a recipe now However, I'm a weirdo that likes my bacon slightly chewy. Do you suggest I simply take the eggplant out after the first round of baking, or take a bit of time off of the second round?

I might have to try this, in the hopes that I'll finally find a reason to like eggplant. I've had stir fried eggplant, baba ghanoush, eggplant pam, and numerous other dishes. Consistently, I dislike them. But it's such a popular ingredient in so many cuisines, so I feel guilty for not liking eggplant. My quest continues.

A common sandwich or baguette filling at Christmas time is; Turkey with cranberry sauce (I prefer Lingonberry) crispy bacon and sage and onion pork meat stuffing. Question: what would one use to replace the turkey and porky stuffing, when making a vegetarian version?

Eggplant Bacon sounds interesting, but when cooking with EggplantIsn't the first step to leave it in a Salt Brine to drain the bitterness out before working with it? Does the bitterness add to the Bacon flavor or does the Bacon brine draw that bitterness out?

I made this probably from the same source you used and made the BLT w/ mash avocado instead of mayo on cauliflower bread (open face) and it was terrific. You're right as long as you don't go in expecting it to taste the same you will love it. We did.

Let me start with Love your recipes & videos. Chef John, do you think cooking the eggplant strips on baking racks would help them dry and crisp up faster? Thanks in advance for your time to answer.
