Learn how to make a Grilled Greek Chicken recipe Joseph Dunphy: I can see one huge problem with what he's doing, immediately - he's using a highly acidic marinade in a metal bowl. This is a problem, because the acid will attack the metal, damaging the bowl over the years. Also, the reaction between the acid and the metal will produce possibly toxic metal salts, which will find their way into one's food. That which does not immediately kill one doesn't necessarily make one stronger. For acidic marinades, one is better off using a non-reactive bowl: glass or ceramic will work fine. There are very few substances that will attack glass, and none of them are things that you'd want in your food, anyway, so glass bowls (which are easily found at department stores) would seem like the best choice.

You can try and an other option (better with chicken chops. Grill it only with salt, garlic and olive oil in high temp and as it's hot put it inside a hot pot, near your hot spot, marinate it and cover it. Continue with other parts of your chicken. Serve it with the pot, use your leftover marinade inside your pot, over your homemade grilled bread (toast)

It looks so good. I am not Greek but I have many Greek friends and I love the food and the pastry. So can you use the same marinade for pork souvlaki? That is another favorite of mine. And when using a gas grill to cook this since you said low heat maybe just use one side to cook and put the heat on the other side?

A greek friend of my brother's did something similar. Except he put the chicken on a sheet pan and smeared some of the marinade on some vegetables like potatoes, carrots and broccoli and roasted them all together. The veggies soaked up some of the chicken's juices as they roasted and tasted real good.

The Charles Dickens of your Greek Grilled Chickens. .. Just beautiful. I just wish his voice matched his looks. He seems a bit too manly for the voice. I expected a Jeeves Butler type look. But thanks for the videos as they are greatly appreciated. Love Ya Man

I just tried this. Its amaaaaazing. Before grilling there wasnt much color to it so I was worried I had messed it up. But once it was done, the flavor was all the way through the meat. Super simple to do as well.

I would serve this with my greek salad. grape tomates, seedless cucumber, olives, shaved shallots, feta cubes and my lemon/garlic/oregano vinagrette. Sometimes, I add sliced serrano peppers (hate bell peppers.

Wow This dish looks phenomenal, Chef John. I had a Greek stepmom a long time ago and she had turned my family on to Greek food, and believe me that chicken cooked in that way is quite a tasty dish.

DRUMSTICK + thigh = LEGNever marinade in metal OR plastic. Glass, ceramic or baked enamel are the safe, healthy, tasty, and ecological vessels to use for marinades, acidic foods, and storage.
