Quick and easy recipe for cheese muffins, one of the most savory muffins, fluffy, cheesy in the inside, with a great crispy top. They are simply delicious near a good fresh salad or soup and a good alternative for kids lunch boxes. Ingredients: Makes 12 muffins 1 1/2 cups (190g) flour 1 tbsp sugar 2 tsp baking powder 1/2 tsp salt 2 cups (200g) grated cheese (cheddar is good) 1/2 cup (120 ml) milk 1/2 cup (120 g) yogurt 1 egg, beaten 1/4 cup (60g) butter, melted Freshly ground black pepper Paprika and grated cheese to sprinkle on top Directions 1. Preheat the oven to 375F (190C. Butter and dust with flour a muffin tray or line with paper cups. 2. In a bowl, whisk together the dry ingredients, flour, baking powder, salt and sugar. 3. Stir in the cheese and black pepper. 4. In another bowl mix the yogurt with milk, egg and melted butter. 5. Fold the liquid into the flour mixture. 6. Spoon mixture into the muffin cups. I'd love to try this recipe, as I have most of the ingredients on hand on a regular basis. Unfortunately, we never have whole milk in my house. We all drink skim milk. But I do keep cream on hand, as I am fond of making creamy soups. So, I figure I can blend cream with skim milk to obtain a cup (or half a cup, or whatever amount I need) by mixing some cream with some skim milk. Makes sense, yes? How much? Is it 1/3 cream to 2/3 skim?

I've tried this recipe before and loved it. However, today I tried lining the muffin tray with paper cups like you suggested for easier clean up and it sucked. The batter stuck to the paper (yes, it was cooked all the eay through) which ruined the whole thing when you tried to eat it

this is one of the best things I've ever eaten I've changed few things like adding cream cheese, parsley, using 1/2 cup of quinoa flakes in substitute for the remaning 1/2 cup of flour and added some flakes of provolone, dried oregano and cream cheese as 'toping'. My dad is going crazy over this: )

I tried these today. they are so delicious Thanks alot can I use white cheese? should I use the same amount? can I also add other ingredients? if yes, do I have to put less cheese?
reply

Tried but not too successful. Probably ingredients too much as it's a little saltish and I use normal instead of self raising flour. Will try again with correct portion of ingredients.

Just made this, but like a cake, instead of muffins and added sliced olives. Turned out perfect and delicious. Great to grab a piece in the mornings, with my coffee. Thank you
