No, he's right. Olive oil has a higher burning temp, butter does not. It doesn't prevent the butter burning however it does help to cook at a higher temperature and yes it also adds flavor and color.

it doesn't prevent the butter. the butter contains milk solids which burn at too high of a temperature, and the oil doesn't eliminate those milk solids. he probably does it for flavor.

I thik it is because the butter on its own wouldn't sustain high enough temperatures and basically burn while the oil on it's own doesn't have that buttery taste.

Pete certainly isn't a conventional cook but that's what makes him fun to watch. Great idea using the milk from the chicken for the bechamel.
